Vegan Nice Cream

I wasn’t really a big fan of sweets until my competitions last year. The cravings for sweets were REAL. No joke, I bought 4 different pints of the Non-Dairy Ben and Jerry’s Ice Cream for after the shows.

Ever since then, I’ve still had a bit of a sweet tooth. Every now and then, I just want something super sweet and delicious but without all of the refined sugar and extra calories.

The perfect solution: banana ‘nice’ cream.

It is really sweet and delicious. The flavor combinations are endless. And, no added sugar or crap ingredients (unless you want to add them!).

In my version, I simply used banana and cocoa powder as the base and then topped the nice cream with desiccated coconut and Enjoy Life chocolate chips.Design-4It starts with extremely ripe, frozen bananas. It seems counter-intuitive, but it’s important to let them defrost a bit so that the bananas can actually be processed. This is what it will look like when you first start processing the frozen bananas. It’s normal. Just keep processing! You’ll have to stop a few times and scrape down the sides.IMG_2162You know you’re almost there when it looks like this. Again, just keep processing!IMG_2166Viola! Like magic it goes from crumbly bananas to creamy, smooth ‘nice’ cream!IMG_2167At this point, you’re ready to add in any flavorings that you want. I went with the classic cocoa powder, but the possibilities are endless. Vanilla extract, or peanut butter, or cocoa powder with peppermint extract (think mint chocolate chip). Again, the flavor options are endless.IMG_2067When you remove your ‘nice’ cream from the food processor, top with your favorite toppings. My favorite are Enjoy Life chocolate chips and desiccated coconut.

Banana Nice Cream

Ingredients

2-3 extremely ripe bananas, cut into 1 inch chunks and frozen

1 Tbsp Cocoa Powder

1 Tbsp Enjoy Life Chocolate Chips (optional)

1-2 Tbsp Desiccated Coconut (optional)

Directions

  1. Allow frozen banana chunks to defrost for about 5 minutes.
  2. Add bananas to a food processor and process for 3-5 minutes, scraping down sides occasionally, until a smooth consistency is achieved.
  3. Add cocoa powder to food processor and process until completely incorporated.
  4. Top with any optional ingredients.
